Cranberry Wheat recipe, extract with grains
This is one of my favorite “fruit” beers to brew, and one of the most requested from non-beer drinkers!
I start with a very basic wheat base and add the Cranberries. Its very simple and turns out very nicely!
| Amount | Item | ||
|---|---|---|---|
| 6.00 lb | Wheat Liquid Extract (8.0 SRM) | ||
| 1.00 oz | Williamette [5.50%] (60 min) | ||
| 0.50 oz | Cascade [5.50%] (5 min) | ||
| 3.00 lb | Cranberries (Boil 0.0 min) | ||
| 0.30 lb | Corn Sugar (Dextrose) (0.0 SRM) |
Use a food processor to chop the frozen cranberries and add them right after the boil, then cool wort as normal. The resulting color of the finished beer has a definate pink tint with a very tart, dry finish. The corn sugar at the bottom is just the priming sugar packet that comes with the wheat kit, I always toss it in the wort pre-boil since I don’t bottle.
As with all my beers I do one week in primary and two or more in secondary. With the amount of fruit involved, I recommend fermenting in a bucket rather than a glass carboy and rack off no later than a week.
Cheers!

[...] Its fun to walk into a beer store specifically because I need to find something to write about the next day! I’m not sure why I continue to purchase fruit beers for review. I haven’t been overly impressed with many of them. It might be that I’m hoping there is one commercial brewer that can match my cranberry wheat. [...]
