Pinto beans are an excellent source of protein. Pinto beans contain about 22 percent protein, while beef has only 18 percent and eggs 13 percent. They are speckled or have streaks of reddish brown on a pale pink background; fading is a sign of aging or long storage. When Johns Hopkins researchers fed 54 men and women similar lunches (one mushroom based, the other meat-based), they consumed roughly 30 fewer grams of fat per day when they went veggie- and found the mushroom meals as satisfying as the beef alternatives. Not a fan of mushrooms? Subbing other low-cal, high-fiber vegetables like zucchini or eggplant may also do the trick.
