Pinto beans are an excellent source of protein. Pinto beans contain about 22 percent protein, while beef has only 18 percent and eggs 13 percent. They are speckled or have streaks of reddish brown on a pale pink background; fading is a sign of aging or long storage. Try to purchase beans of uniform size; otherwise, the smaller ones might become mushy before the larger ones are cooked. If you think this might be a problem, try adding a small amount of baking soda to the water while the beans are cooking to soften the beans.
