Home made beer bread

This quick and easy bread tastes like home-baked yeast bread, and it is excellent with chili and other hearty stews. It tends to harden quickly, but there are seldom leftovers.

Preheat the oven to 350 degrees F.

3 cups self-rising flour
4 Tablespoons of Honey

1 egg
1 bottle room temp. beer (12 oz.) (try Guinness Stout for dark, rich bread)
1/4 stick of butter - melted

Optional – 1 cup of sautéed (caramelized) onions

Butter (or use non-stick spray) a loaf 9” x 5” loaf pan and set aside. In a large bowl, combine the flour, honey, egg and beer (or onions) then mix well. The mixture should be sticky. Pour mixture into the loaf pan. Cover with paper towel and let stand in a warm place for 15 minutes.

Bake at 350 degrees for 45 minutes. Pour melted butter over bread and bake 5 minutes more or until bread tests done.Turn immediately out of baking pan; cool for 10 minutes before serving or slicing (thick slices are best).

Tough Squirrel recipe

Well it is about that time of the  year again and young squirrels are just wonderful fried and eaten with biscuits and gravy.But a lot of the squirrels we come by do not fit into this type.

what i do with the older ones is to parboil them in beer(you can use water too) with salt, pepper, a little vinegar and a white onion. i boil them slow until i can just get a fork into them. take out each piece as this becomes possible.

then pour off the water and you can either use the same pot or a slow cooker. put in the squirrel pieces and pour over them some “sweet baby ray’s” bbq sauce. i cut the sauce with a little more beer to make it just a little runny. you can use any kind of bbq sauce but the above mentioned brand is powerful good.

now slow cook the squirrel until they are completly tender. not falling off the bone tender because that makes them to hard to eat.

this goes great with some home made sweet cornbread!

this is simple to make and i have yet to find people who would try it at all that did not like it!

this also works great for rabbit.

Sandhill Crane Fajitas

1. Shoot cranes(my favorite part)

2. Filet the breast

3. Season with Fiesta Fajita Seasoning and meat tenderizer.

4. Grill breasts med.rare(this is important). If you overcook they will become extremely chewy and tough.

I usually grill them on a hot plate with my onions and peppers.

They truly are the “ribeyes in the sky”.

Easy crockpot meal

It doesn’t get any more easy or fool proof than this. In addition, it’s absolutely delicious. Give it a try and let me know how you like it.

1 - 1.5 lbs meat cut in smallish 1/2″ cubes (venison, wild hog, beef, doves)
1 can of Campbells french onion soup
1 can of Campbells cream of celery soup
Black pepper

Combine in crockpot and cook low all day. Serve over rice or pasta

Deer Sausage Taco Soup

1.5 To 2 Lbs Of Pan Sausage I Like The Spicey Type
1 Or 2 Can Roltel Tomatoes
1 Cream Corn
1 Whole Corn
1 Pinto Beans
1 Onion
1 Clove Garlic
1 Pack Taco Mix
1 Bag Fritos
1 Pk Shreded Cheezzz
May Need A Can Of Water

Brown Meat, Onion, & Garlic, Drain Grease, Add All Cans , Taco Mix
And Simmer. Ready In 30min. Place Fritos And Cheez In Bowel And Pour Soup On Top.
For Large Group Just Double Up. Cheap Easy And Good!!
